Roasted Sausage and Veggies

Ingredients

  • 16 oz Scott Pete Polish Sausage
  • 2 c. diced sweet potato
  • 2 c. chopped asparagus
  • 1 c. chopped bell pepper
  • 1 c. Brussels sprouts, halved
  • 2 cloves garlic, minced
  • 2 Tbsp. olive oil
  • 1 Tbsp. Italian seasoning
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Directions

  1.  Preheat oven to 400F.
  2. Slice the sausages into 1-inch rounds.
  3. Toss sausage and veggies on a baking sheet. Drizzle with olive oil, Italian seasoning, and salt and pepper. Toss again in the oil and spices.
  4. Bake for 10 minutes, then flip. Bake 10 minutes more.
  5. Enjoy!
