Roasted Sausage and Veggies
Ingredients
- 16 oz Scott Pete Polish Sausage
- 2 c. diced sweet potato
- 2 c. chopped asparagus
- 1 c. chopped bell pepper
- 1 c. Brussels sprouts, halved
- 2 cloves garlic, minced
- 2 Tbsp. olive oil
- 1 Tbsp. Italian seasoning
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions
- Preheat oven to 400F.
- Slice the sausages into 1-inch rounds.
- Toss sausage and veggies on a baking sheet. Drizzle with olive oil, Italian seasoning and salt and pepper. Toss again in the oil and spices.
- Bake for 10 minutes, then flip. Bake 10 minutes more.
